Recently I bacame more and more interested what happens after the boil…  Ie collecting the wort and preparing for fermentation.  I learned it the traditional German way by filtering the hot wort through a fine filter mesh.  But the splashing unnerves me because of the potential for hot-side oxidation…

Since I am hopping very late and don’t want to dry-hop my lagers, a rapid cooling period is needed to prevent isomerisation and loss of flavour… So I’m thinking on building a counter-flow wort chiller which I combine with a wort siphon and pump (sorry, the instructions are in German, but they should not be too difficult to understand since the pictures are quite self-explanatory).   Let’s see how I fare with that!
